Pasta Asciutta

250 g of minced meat
350 ml of tomato passata
1 carrot
1/8 l red wine
100 g celeriac
1 onion
2 cloves of garlic
30 g Pasta Asciutta spice mix
20 g tomato paste - double concentrated
Parmesan of your choice
Cut the carrot, celery, onion and garlic into small pieces. Heat a little olive oil in a saucepan.
Add the minced meat and sear quickly. Now add the tomato paste, and when the tomato paste is well roasted, lightly roast the Pasta Asciutta spice. Then pour in the red wine and let it simmer until it has evaporated. Add the crushed tomatoes and let everything cook for a long time on a low level. Pour in water from time to time and continue to boil until the sauce has reached a creamy consistency. (min. 2 hours on low level, even 3-4 hours would be better!)
Cook the pasta according to package directions in plenty of salted water until al dente. Mix this with the sauce and arrange on the prepared plate. Refine with grated Parmesan if desired.
