Americans with frosting

Ingredients for 10 Americans:

125 g softened butter (room temperature)

120 grams of sugar

2-3 tsp vanilla sugar from COOKandGRILL

1 pinch of salt

2 eggs

2 tbsp lemon juice

270 grams of flour

2 teaspoons of baking soda

Some Milk

For the glaze:

1 tbsp lemon juice

3 tbsp hot water

175 g icing sugar

Preparation:

Preheat the oven to 180°C and line a baking tray with baking paper.

Beat the softened butter with a mixer until you get a creamy mass. Then stir in the eggs one at a time. Gradually add sugar, vanilla sugar, salt and 2 tablespoons of lemon juice to the mixture and mix everything to a fluffy mixture.

Sift in the flour and baking powder and stir to form a firm dough. The dough shouldn't be runny, but it shouldn't be very sticky either. If there is no liquid, gradually add a little milk until a creamy and fluffy consistency is achieved.

Now put the dough in 10 evenly distributed blobs on the baking sheet. It doesn't have to be perfect circles yet. The dough will spread in the oven, so leave enough space between the blobs.

Bake the Americans on the middle shelf for 12 minutes until the edges are lightly browned. Then take out the Americans and let them cool down a bit.

In the meantime prepare the glaze. To do this, stir 2 tablespoons of hot water and 1 tablespoon of lemon juice with the icing sugar to a smooth mass. Spread this mass onto the flat sides of the Americans with a smooth knife. While the icing is still wet, sprinkle with a pinch of hibiscus sugar to create a beautiful finish.
