Berry vanilla cheesecake in a glass

Ingredients:

1 lemon

120 grams of blackberries

120 grams of blueberries

160 grams of strawberries

200g mascarpone

4 tbsp honey

2 tsp vanilla sugar Primigenia No.1 from COOKandGRILL

100 g butter biscuits

25 grams of butter

60ml of water

A frozen berry mix can be used instead of fresh berries. However, only use a total of 300 g berry mix. Note that this version will be smoother.

Preparation:

Wash the strawberries, remove the stalk and quarter. Wash the remaining berries and put them in a saucepan with the strawberries. Add the water, half (2 tbsp) of the honey and the vanilla sugar and bring to a boil. Do not add water when using the frozen berries. Let the mixture simmer on a low flame for about 10 minutes. Then let it cool down.

For the dessert base, crush the shortbread biscuits with butter in a food processor.

Wash the lemon in hot water, grate the zest and squeeze out the juice. Mix the mascarpone, 2 tablespoons of the honey, the lemon juice and zest in a bowl until creamy.

Place the biscuit mixture in small glasses and press down lightly with a spoon. Divide the mascarpone mixture among the glasses and top with the (not hot) berry sauce. Garnish with fresh berries if desired.
