Satay skewers with chilli mayo

Ingredients:

  • 800g chicken breast fillets

For the marinade:

  • 2 teaspoons Xoi's Chili Sauce from Cook&Grill
  • 3 tablespoons tomato ketchup
  • 5 tbsp soy sauce
  • Juice of half a lime
  • 1 ginger
  • 2 cloves of garlic

Preparation:

  1. Cut the chicken breast fillets into bite-sized pieces

For the marinade:

  1. Mix all the "liquid" ingredients together - peel and finely chop the ginger and the garlic - then fold in.
  2. Soak the fillet pieces in the marinade for 30 minutes - then skewer them on skewers.
  3. Fry the skewers in a pan with hot oil until golden brown on all sides - add the marinade and fry for another 3-5 minutes.
  4. For chilli mayo: Mix Xoi's hot chili sauce with mayonnaise.
