50 g Pork Classic spice mix from COOKandGRILL
2 Duroc pork chops, 700 g each
Rub the chops with the Schwein Classic spice mixture.
Prepare the grill for indirect grilling. Place the pork chops indirectly on the grill and set the core temperature probe to 59 °C.
Grill over medium heat (160-180°C).
As soon as the chops have reached the desired core temperature, remove them from the grill and let them rest in a warm place for about 10 minutes.
TIP: The latching prevents the meat juices from escaping.
