500 g minced beef
10 slices of bacon
BBQ sauce of your choice
10 cubes of Emmental cheese
Smoker chips of your choice
10 pieces of toothpicks
First you prepare your grill for a heat of approx. 1 10 ° C. Then mix your minced meat with 1 tbsp BBQ sauce and 2 tbsp BBQ Classic spice mixture. Now weigh the mass into approx. 50 g portions and divide them into 10 pieces. Now flatten each of the 10 portions a little (in your hand or on the chopping board) and place a cheese cube of about 1cm x 1cm edge length in the middle. Now enclose it with the hack and shape it into an even ball with both hands.
So far it's just a "moooh" because we're still missing the oink. That's why you now put a slice of bacon tightly around your balls and fix the bacon with a toothpick. Now it's a MOINKBALL! Of course you repeat this with all balls.
Finally, put some smoker chips on the embers or burners in your grill.
When it starts to smoke you can put the moinkballs on the indirect side and let them cook there for about 30 minutes. After this time, brush your moinkballs with the BBQ sauce if you like and leave them on the grill for another 10 minutes
If you want to measure the core temperature, I would take it off the grill and serve it at around 68 degrees.
